Origin

This member of the onion family is native to Asia and Europe. The botanical name comes from a Greek word meaning “reed-like leek”.

Qualities

Chives can help blood circulation and the digestive system. They are a good source of vitamins, minerals, and antioxidants. Chives contain particularly high levels of vitamin C.

Use

Chives have the most flavor fresh, and are the perfect topping to add a little oniony flavor to nearly any dish. They pair especially well with seafood, and they are great as a garnish for cream soups, eggs, and potato or macaroni salad. Chive flowers are also edible. Try them as a garnish or use them to make homemade infused vinegar.

Care & Harvest

✂️ Pruning: Check the roots monthly and trim any that are brown or extending past the yPod. To delay bolting, cut flowering scapes as they appear.

🔎 Plant Health: Thrips are a common pest, but you can use our prevention and treatment tricks to keep pests at bay!

🌿 Harvest: For ongoing harvest, let the leaves grow at least 4 inches tall before cutting them down to 1-2 inches above the base. The flowers are edible, too! Store Chives loosely wrapped in a paper towel in the veggie drawer of your refrigerator.

Fresh Chive Vinaigrette

Ingredients

  • 1/2 small garlic clove, finely chopped

  • Kosher salt

  • 2 teaspoons white wine vinegar or fresh lemon juice

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon chopped fresh chives

  • Freshly ground black pepper

  • 8 cups salad greens and fresh herb leaves and tender stems - use any combination you have!

Instructions

  1. Combine garlic and a pinch of salt in a large salad bowl.

  2. Mash to a paste with a fork.

  3. Mix in vinegar, then oil and chives; season with salt and pepper.

  4. Add greens and herbs and toss to coat.
